Abstract: The thermotreatment of the domestic carotenoid-containing plant materials of the sowing carrot roots Daucus sativusRoehl allowed to get the concentrate of hydrophilized carotenoid compounds used in the food industry as a colorant. The effect of the attendant compounds on the hydrophobichydrophilic properties of carotenoids was studied on the model system of the main components of the sowing carrot roots using spectrophotometry and HPLC.
