| Abstract: | The article considers scientific and technical approaches to the creation of innovative blends of vegetable oils based on oilseed raw materials produced in the territory of the Eurasian Economic Union (EAEU) countries. As base components of blends it is proposed to use oils obtained from sunflower and cotton (Kazakhstan), ginger (Russia) and flax (Belarus). These oils are characterized by a variety of fatty acid composition, the presence of biologically active components and technological compatibility. The peculiarities of each type of oil in terms of the content of basic polyunsaturated fatty acids (omega-3, omega- 6), tocopherols, phytosterols and other nutrients were analyzed. The expediency of blending for the purpose of optimizing the ratio of fatty acids, improving organoleptic properties, increasing resistance to oxidation and expanding the functionality of products is substantiated. Technological aspects of selection of proportions of blending components are considered and examples of possible formulations balanced in nutritional value and intended for use in dietary and preventive nutrition are given. It is shown that blending of vegetable oils is an effective way of deep processing of agrarian raw materials and formation of competitive oil and fat products in the domestic and foreign markets. The use of raw materials from the EAEU countries contributes to the development of regional cooperation, import substitution and increasing the added value of agricultural products. The results of the study can be used in the development of regulatory and technical documentation, creation of new formulations, as well as in the industrial implementation of innovative oil compositions. |
